Part of the fun of going to Burdock was that Rayâ€™s friends picked us up in a 1984 Rolls Royce. And the rest of the fun was one of the best meal I have had in Vancouver. We loved Chef/owner Andrea Carlsonâ€™s deep, earthy flavours with lots of vegetables and unusual ingredients. We shared shaved asparagus and arugula salad with apple vinaigrette; potato waffle with fava beans and goat Camembert cream; fire roasted green farro with sea asparagus; oxtail ramen with Swiss chard kimchi; halibut with burdock tea; wild salmon with nasturtium juice and salted caramel apple pot pie.Â Dedicated to local, seasonal and organic ingredients, this restaurant is everything I love about Vancouver.
