There are many local, sustainable and environmentally friendly restaurants in Vancouver and as head chef Chris Whittaker says this is a trend that’s here to stay. The restaurant is located in the boutique Listel Hotel which is also dedicated to environmental protection and sustainability. Tapas style plates that are meant for sharing gave us a chance to try lots of different things – popcorn and cracklings; spiced grains and roasted vegetables; smoked lamb ribs with pickled radishes; crab and potato perogies with horseradish cream; elderflower panna cotta and chocolate and hazelnut layer cake were just some of the things we had.
