BACI BANANA MUFFIN TOPS

The best part of the film Eat Pray Love, for me, was the EAT. It took place in Italy and was charming and delicious. The scene where Liz lectured her friend Sofi (Tuva Novotny) about eating her pizza even though she was afraid of having a “muffin top” was cute but a little hard to digest. It did, however, make me want to have the other kind of muffin top. (If baking these in regular muffin pans, they will take 5 to 10 minutes longer.)

Makes 10 to 12

Ingredients

  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup buttermilk (or yogurt)
  • 1 tsp baking soda
  • 1 egg
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • pinch salt
  • 8 baci kisses, chopped (about 4oz)

Method

    1. Mash bananas with buttermilk and baking soda.

    2. Beat egg with sugar and oil.

    3. In a large bowl combine all-purpose flour with baking powder and salt. Add banana mixture and egg mixture to dry ingredients and stir only until blended. Add chocolate.

    4. Butter or spray 12 muffin top pans. Fill pans with batter just barely to the top. Bake in a 350F oven for 15 minutes or until cooked through. Cool on a rack.
