CHEDDAR AND TRUFFLE BRUSCHETTA

My friend and colleague in San Francisco, Mary Risley, had this delicious sandwich in Amsterdam and translated into an easy appetizer for a dinner party she hosted for me when I visited her recently.

Makes 8 servings

Ingredients

  • 8 slices whole grain bread
  • 2 tbsp soft butter
  • 1/4 cup mayonnaise
  • 2 tsp truffle oil
  • 8 oz old Cheddar cheese, thinly sliced
  • 1 cup mixed baby greens
  • 1 tbsp extra virgin olive oil
  • 1 tbsp mayonnaise
  • salt and pepper to taste

Method

    1. Toast or grill bread. Spread very lightly with soft butter.

    2. Combine mayonnaise with truffle oil. Spread some on each piece of toast.

    3. Top with thin slices of cheese.

    4. Combine olive oil, mayonnaise and a little salt and pepper. Toss with greens. Arrange on cheese. Cut each piece of bread in halves or quarters to serve.
