CHOCOLATE CRINKLE COOKIES

Makes approximately 80 cookies  

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • pinch of salt
  • 1/2 cup butter, melted
  • 4 oz unsweetened chocolate, melted
  • 2 cups sugar
  • 4 eggs
  • 2 tsp pure vanilla extract or paste
  • 1 cup icing sugar, sifted

Method

    1. In a medium bowl, sift or mix together flour with baking powder and salt. Reserve.

    2. In another bowl, whisk butter with chocolate and sugar. Add eggs one at a time. Beat in vanilla. Stir in flour mixture. Refrigerate batter at least 4 hours or preferably overnight.

    3. Place icing sugar in a shallow dish. Shape batter into 1" balls and roll heavily in icing sugar. Place cookies a few inches apart on a baking sheet lined with parchment paper.

    4. Bake in a preheated 350F oven for 10 to 12 minutes. Do not overbake! They should still look moist on the surface. Cookies should be crusty on the outside buy chewy inside. Cool on racks.
