GRILLED BROCCOLI

Although I grill lots of vegetables, I had never grilled broccoli before Aaron Lynett, the National Post photographer I often work with for my column photos, said he cooked it this way all the time and it was delicious. It’s great as a side dish but also yummy in salads, on pizza etc. Thanks Aaron.

Makes 4 to 6 servings

Ingredients

  • 1 large bunch broccoli
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt

Method

    1.  Trim tough stalks of broccoli and peel about 2” up the stalks. Cut into quarters if thick or halved if thinner. Toss with olive oil and salt.

    2. Heat grill and brown broccoli about 2 minutes. Remove to a cooler part of grill, turn heat to low, cover and cook about 5 minutes longer.
