Although I grill lots of vegetables, I had never grilled broccoli before Aaron Lynett, the National Post photographer I often work with for my column photos, said he cooked it this way all the time and it was delicious. Itâ€™s great as a side dish but also yummy in salads, on pizza etc. Thanks Aaron.
Makes 4 to 6 servings
1. Â Trim tough stalks of broccoli and peel about 2â€ť up the stalks. Cut into quarters if thick or halved if thinner. Toss with olive oil and salt.
2. Heat grill and brown broccoli about 2 minutes. Remove to a cooler part of grill, turn heat to low, cover and cook about 5 minutes longer.
