GRILLED STEAK SANDWICHES WITH CARAMELIZED ONIONS AND GORGONZOLA MAYO

For a delicious, fun and reasonably priced, casual barbecue, setup a steak sandwich bar with a variety of buns and bread, steak thinly sliced on a platter,  caramelized onions, any toppings you wish and sauce (or sauces). Allow guests to make their own sandwiches.

Makes 6 sandwiches

Ingredients

  • 1 1/2 lbs (750g) hanger steak, about 1" (2.5cm) thick (or flank steak)
  • 1 tbsp (15mL) brown sugar
  • 1 tsp (5mL) coarsely ground black pepper
  • 1 tsp (5mL) coarse salt
  • 2 cloves garlic, minced
  • 2 tbsp (25mL) olive oil
  • 1 bunch baby arugola
  • 6 buns or 12 slices bread
  • caramelized onions:
  • 2 tbsp (25mL) olive oil
  • 4 large onions, coarsely chopped
  • 1 tsp (5mL) sugar
  • 2 tbsp (25mL) balsamic vinegar
  • salt and pepper
  • Gorgonzola mayo:
  • 1/2 cup (125mL) mayonnaise
  • 2 oz (60g) gorgonzola or cambazola
  • 1 tbsp (15mL) chopped fresh tarragon

Method

  1. Pat steak dry. In a small bowl combine sugar, pepper, garlic, salt and oil. Rub into steak. Allow to marinate one hour at room temperature or up to overnight in the refrigerator.
  2. Heat oil in a large deep skillet. Add onions and sugar. Cover and cook about 15 to 20 minutes, stirring occasionally on medium heat until browned.  Add vinegar and cook gently about 5 minutes longer.
  3. Combine mayonnaise with gorgonzola and tarragon and mash together.
  4. Grill or barbecue steak 4 to 6 minutes per side for medium rare depending on thickness of the meat. Use barbecue, grill pan or a panini maker. Let steak rest on carving board at least 5 minutes and then slice thinly, on the diagonal, against the grain.
  5. Place steak slices on bread or bottom of buns, top with onions over steak and then top with arugola. Spread bread or top part of buns with mayo. Close sandwiches, cut in half and serve.
