MARINATED PINEAPPLE MARTINI

This is my favourite new cocktail adapted from the Ocean Reef Club in Key Largo. Adjust the amount of honey to have the sweetness you like.

This is my favourite new cocktail adapted from the Ocean Reef Club in Key Largo. Adjust the amount of honey to have the sweetness you like.

Makes 8 drinks

Ingredients

  • 1/2 ripe pineapple, skin removed, halved lengthwise and sliced
  • 2 cups vodka
  • 1/3 cup Triple Sec
  • 1 cup pineapple juice (preferably Cerise)
  • 1 tbsp honey or to taste

Method

  1. Place pineapple in a bowl or container. Add vodka, Triple Sec, juice and honey. Mix well. Taste and adjust sweetness. Refrigerate up to 4 days.
  2. To serve, place a piece of pineapple in every glass with or without ice cubes. Pour in about 1/3 cup of the cocktail mixture.
