MARINATED PINEAPPLE MARTINI
This is my favourite new cocktail adapted from the Ocean Reef Club in Key Largo. Adjust the amount of honey to have the sweetness you like.
Makes 8 drinks
- 1/2 ripe pineapple, skin removed, halved lengthwise and sliced
- 2 cups vodka
- 1/3 cup Triple Sec
- 1 cup pineapple juice (preferably Cerise)
- 1 tbsp honey or to taste
- Place pineapple in a bowl or container. Add vodka, Triple Sec, juice and honey. Mix well. Taste and adjust sweetness.¬†Refrigerate up to 4 days.
- To serve, place a piece of pineapple in every glass with or without ice cubes. Pour in about 1/3 cup of the cocktail mixture.
