MOROCCAN GLAZED CHICKEN MEATBALLS

These Moroccan flavoured meatballs are great as appetizers or a main course with Israeli couscous or rice. Sweet with honey and spices they are perfect for Rosh Hashanah or anytime. You can use beef or lamb in place of chicken.

Makes about 40 meatballs

Ingredients

  • Ingredients:
  • 1 1/2 lbs (750g) ground chicken
  • 1 egg
  • 3/4 cup (175mL) breadcrumbs (preferably panko)
  • 2 tbsp (25mL) tomato sauce or ketchup
  • 2 tbsp (25mL) finely grated onion
  • 2 tbsp (25mL) finely grated carrot
  • 1 tsp (5mL) kosher salt
  • 2 tbsp (25mL) extra virgin olive oil
  • sauce:
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp (15mL) finely chopped fresh ginger root
  • 1 tsp (5mL) ground cumin
  • 1/2 tsp (2mL) cayenne or Aleppo pepper - optional
  • 1/8 tsp (.5mL) ground cinnamon
  • 28oz/796mL tin plum tomatoes, pureed with their juices
  • 1 tsp (5mL) kosher salt
  • 2 tbsp (25mL) honey
  • 2 tbsp (25mL) lemon juice
  • 2 tbsp (25mL) chopped fresh cilantro or parsley

Method

  1. In a large bowl combine chicken with egg, breadcrumbs, tomato sauce, onion, carrot and salt. Knead together lightly. Shape mixture into small balls about 1 1/2" (4cm) and place on a baking sheet lined with waxed paper.
  2. In a large (12"/30cm) deep skillet heat oil and brown meatballs, in two batches if necessary. Remove and reserve.
  3. Add onions, garlic and ginger to the pan (add oil if necessary) and cook a few minutes until tender. Add cumin, cayenne and cinnamon. Cook about 30 seconds and add tomatoes. Season with salt. Bring to a boil. Reduce heat and add meatballs. Cook, uncovered, until meatballs are cooked through and sauce has thickened about 15 to 20 minutes. Add honey and lemon juice and cook a few minutes longer. Season to taste. Sprinkle with cilantro.
