SHRIMP LOUIS SALAD SANDWICH

Instead of layering the ingredients, you can dice the eggs and avocado, chop the lettuce and combine everything before filling the sandwich. Toast and butter the roll for extra taste and texture. If you are allergic to or don't eat shellfish, try this with chunks of freshly cooked salmon fillets.

Makes 4 sandwiches

Ingredients

  • 4 hot dog buns
  • dressing:
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce (eg. Heinz) or ketchup
  • 1 tbsp lemon juice
  • 1 1/2 tsp Worcestershire sauce
  • 1/2 tsp Tabasco sauce
  • salad:
  • 3/4 lb cooked small or medium shelled shrimp, patted dry
  • 1 ripe avocado, sliced
  • 3 hard cooked eggs, sliced
  • 4 leaves Romaine lettuce

Method

    1. Make dressing by whisking mayonnaise with chili sauce, lemon juice, Worcestershire sauce and Tabasco. Adjust seasoning to taste. Combine with shrimp.

    2. Line hot dog bun with lettuce and then put a row of shrimp, eggs and avocado inside.

    3. Wrap tightly if not serving immediately.
